SEASONAL DISHES: THE BEST RECIPES FOR THIS AUTUMN

When the leaves slowly change colour and fall to the ground, it means only one thing – the days are getting shorter and the temperatures are slowly cooling down. Autumn is here! But this season also has a lot to offer.

Autumn has arrived and with it a whole host of seasonal ingredients just waiting to be transformed into delicious dishes. Vegetables like pumpkins, potatoes and tomatoes are especially delicious at this time of year! And local fruit classics like apples and pears taste better than ever.

In this article, we present you with simple and quick recipes that you can try out during this cosy time of year.

PUMPKIN-TOMATO SOUP

  • 500g Hokkaido pumpkin
  • 800g chopped tomatoes (2 tins)
  • 1 onion
  • 2 cloves of garlic
  • 1 tsp vegetable stock
  • 3 tbsp cream cheese
  • 1 tbsp olive oil
  • Salt and pepper

First wash the pumpkin well and remove the seeds. Cut the pumpkin into large pieces and dice the onions and garlic.

Heat the oil in a large pot and fry the onions and garlic – then add the pumpkin and tomatoes. Don’t forget to stir well! Season with cream cheese, salt and pepper to taste and the soup is ready.

OVEN PUMPKIN WITH FETA

Ingredients:

  • 1 small hokkaido, approx. 1 kg
  • 1 clove of garlic
  • 2 tbsp olive oil
  • 100 g feta
  • 1 small handful of thyme, plucked
  • Salt and pepper

Preheat the oven to 180° C top/bottom heat. Now it’s time to start chopping – halve and core the pumpkin and cut it into bite-sized pieces. Peel and finely chop the garlic.

Put the pumpkin, garlic, oil, thyme, salt and pepper in a baking dish, mix well and crumble the feta on top.

Bake for approx. 25 minutes until the pumpkin is cooked and the feta is golden brown and crispy. Season with salt and pepper if necessary and enjoy!

PUMPKIN AND POTATO CASSEROLE

Ingredients for 6 servings:

  • 700g potatoes, thin slices
  • 700g pumpkin, thin slices

 

For the sauce:

  • 200g cream
  • 100ml stock
  • 50g parmesan, grated
  • 2 tbsp sour cream
  • Pepper
  • Nutmeg

 

  • 100g cheese, grated
  • 50g feta
  • Fresh thyme

Cut the potatoes and the pumpkin into thin slices, but the potato slices should be thinner here. Then spread the slices on a 30x40cm baking tray or layer them in a baking dish.

Heat the oven to 180° and bake the casserole for 50 minutes. Remove the foil, add the cheese and thyme and bake until the cheese is golden brown.

Apple cake

Ingredients:

  • 160g butter
  • 3 eggs
  • 1 tsp vanilla paste
  • 160g sugar
  • 220g flour
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 4 small sour apples
  • 3 tbsp sliced almonds
  • a little cinnamon-sugar

First beat the butter, eggs and vanilla paste until fluffy. Mix the flour, baking powder and cinnamon and then stir everything in. Next, peel the apples, core them and cut them into quarters.

Then pour the batter into a greased or baking paper-lined tin and smooth it out. Distribute the apple pieces evenly and press them lightly into the batter.

Sprinkle the almonds with the cinnamon and sugar on the cake and bake it in the oven at 160° convection oven for about 35-40 minutes.

Cooking seasonally is a great way to try out new recipes. Above all, it gets you in the mood for the new season and is the perfect activity to welcome autumn. Have fun cooking and enjoying!
