Four perfect dishes for autumn

The leaves turn orange and the temperature drops – autumn is here. Now it’s goodbye salads and hello comfort food. But what to cook? On cold days, you’re just missing the inspiration. This is why we have collected three amazing dishes and a sweet treat perfect for autumn.

CHICKPEA-CURRY

Who doesn’t want to spend too much time on cooking should try the chickpea-curry. The vegan dish preps fast and thus is perfect for a stressful day.

Fresh garlic 1 onion 1 can of chickpeas 1 can of chopped tomatoes 1 can of coconut milk 250 g fresh tomatoes 2 tsp curry paste 3 tsp curry powder salt pepper

Chop the garlic and the onions and fry them in some oil in a big pan. Dice the fresh tomatoes and add them to the pan. Let is simmer a bit before adding the canned tomatoes. Add the curry paste and powder as well as some salt and pepper and let it sit a bit. Drain the chickpeas and put them aside. Slowly add the coconut milk to the tomatoes and let it simmer until it has the right thickness. After 5 minutes, add the chickpeas and let the curry simmer for some more time. Curry is usually served with rice.

PUMPKIN SOUP

The classic dish in autumn! Pumpkin dishes as perfect for autumn and therefore it is no surprise that the pumpkin soup made it on our list.

1 Hokkaido pumpkin
2 onions
3 garlic cloves
30 g butter
25 g ginger
1 l broth
100 ml orange juice
1 TL curry powder
2 TL honey
salt
pepper
nutmeg

Peel the onions, garlic and ginger and dice them. Wash the pumpkin and cut off the stalk. Cut it in half, remove the seeds and dice it. Melt the butter in a big pot, add onions, garlic and ginger and let simmer. Add the pumpkin with the curry powder and honey and let it braise lightly. Deglaze it with the orange juice and let it simmer for 5 minutes. Then pour in the broth and let it simmer for 20 more minutes. Finally, blend everything with a blender and add salt, pepper and nutmeg.

 

SHEPHERD’S PIE

The traditional English dish is perfect for cold winter days and perfect to prepare.

1 onion 3 carrots 500 g minced beef or lamb 250 ml broth 2 tsp tomato puree 900 g potatoes 85 g butter 50 ml milk salt pepper

Peel and cut the potatoes in small pieces and boil them 10-15 minutes in salted water until tender. Drain them, add a pinch of salt, butter and milk and mash everything. Leave the mash. Then peel and dice the onion and the carrots and braise them in oil. Wait until the carrots are slightly soft and then add the minced beef with some salt and pepper. Fry until the meat is brown and then add some tomato puree. Pour in the broth and let it simmer for a bit. Fill the beef in an oven form and cover it with the mash. The pie then must bake at 180 degrees for 30-40 minutes.

APPLE CRUMBLE

As the sweet finale apple crumble is the perfect choice. It is a fast dish and sweetens every dark autumn day.

600 g apples
2 TL brown sugar
175 g flour
110 g brown sugar
110 g butter

Peel, core and dice the apples, spread them in an oven dish and add two tablespoons of sugar. Mix the flour, sugar and the butter until you have crumbles. Add the crumble to the apples and bake at 180 degrees for 35-40 minutes. Apple crumble tastes delicious with custard or ice cream.

With these tasty dishes, you should immediately feel inspired to start cooking and to defy the cold days with delicious meals. We are definitely looking forward to the cold season now!
