Guacamole was yesterday – The avocado rice is here!

The avocado has been one of the most popular superfoods for a long time! Whether as a spread on toast or in smoothies, the superfruit can be enjoyed in many ways. Now a new social media hit has developed and it’s called Avocado Rice!

Quick and easy to prepare, avocado rice is perfect as a main meal or as a side dish. The full grain rice contains a lot of fibre and thus provides a long-lasting feeling of satiety. Due to the many unsaturated fatty acids in the avocado, fat burning is activated and cravings are slowed down. The delicious light dish can also be refined with fresh herbs, spices and lime juice. In short: an optimal dish for the summer!

AVOCADO RICE

  • 1 avocado, released and halved
  • peel and juice of a lime
  • 1 chopped garlic clove
  • 1 teaspoon of cumin
  • 1/2 teaspoon cayenne pepper
  • salt and pepper
  • 2 cups of boiled brown rice
  • 1 hand full of chopped coriander

In a large bowl are crushed the avocado, garlic, lime, cumin, salt and pepper mixed to a coarse cream. Add the boiled rice and mix well with the cream. To give the whole thing the right pepp, refine the mixture with fresh coriander – the masterpiece is ready!

For those who eat low carb, the rice can of course be easily replaced by cauliflower. So get your cooking spoons, ready, go!
